KInd of IPA

Post by rui » Sun Dec 13, 2015 2:28 am

so today i was brewing with my cousin, something that we do every three months!! this time was his turn to bring malt and i give hops and yeast!!
he made a mistake mesauring the weight from the grains, so instead of the normal 4kg of grain for 20 litres, he brought almost 6.5kg.....
We were suposed to do an APA, in the end its more an AIPA, but with less hop aditions!!!
here's the recipe:

new house's IPA
American Pale Ale

Recipe Specs
----------------
Batch Size (L): 20.5
Total Grain (kg): 6.440
Total Hops (g): 138.00
Original Gravity (OG): 1.060 (°P): 14.7
Final Gravity (FG): 1.011 (°P): 2.8
Alcohol by Volume (ABV): 6.37 %
Colour (SRM): 5.5 (EBC): 10.8
Bitterness (IBU): 45.0 (Average)
Brewhouse Efficiency (%): 62
Boil Time (Minutes): 90

Grain Bill
----------------
4.500 kg Pilsner (69.88%)
1.000 kg Vienna (15.53%)
0.800 kg Munich I (12.42%)
0.140 kg Carapils (Dextrine) (2.17%)

Hop Bill
----------------
18.0 g Magnum Pellet (12% Alpha) @ 75 Minutes (Boil) (0.9 g/L)
20.0 g Cascade Pellet (7.2% Alpha) @ 5 Minutes (Boil) (1 g/L)
20.0 g el Dorado Pellet (14.5% Alpha) @ 5 Minutes (Boil) (1 g/L)
20.0 g Mosaic Pellet (11.8% Alpha) @ 5 Minutes (Boil) (1 g/L)
30.0 g Cascade Pellet (7.2% Alpha) @ 5 Days (Dry Hop) (1.5 g/L)
30.0 g Citra Pellet (11.1% Alpha) @ 5 Days (Dry Hop) (1.5 g/L)

Misc Bill
----------------

Single step Infusion at 67°C for 90 Minutes.
Fermented at 20°C with Safale US-05

today the efficiency went realy down....i think it was because the grains were milling to thin i thin...and the sparge was to fast....... we lost some temperature during mash, 67ºC to 64ºC, something wasnt working today.... #-o

but in the end we got a tasty wort, and smelly.....had a lovely aroma!!

after a week of fermentation we will dry hop with citra and cascade!!! Just hope that will trun up a good beer, even if a bit stronger....

cheers

Sounds great. Around 45 ibu will be plenty bitter, and your dry-hops will keep it squarely in the IPA category. Should end up delicious. Cheers!

6.5 isn't all that bad,
Do you usually use Pilsner malt for your pale ales ?

No, i think my cousin had a rest of pilsen malt that he wanted to use...and with all that munich and vienna malt, has a good balance to face the hops!!
yes, 6,5% isnt that bad, but we wanted to do a 4,5-5% APA, to use as a session beer, house ale!!!
