Bottles not carbing...

Post by dshar » Fri Jan 01, 2016 11:28 am

I brewed a hobgoblin clone a few weeks ago, everything went smoothly (for a chnge) and i hit all the volumes, the density was textbook too. I bottled it all up 3 weeks ago now and stored in my cellar which is at around 15c. Id expect it to have gassed up by now, but trying one last week there was only a little gas and it didnt taste v nice, i think it was the sweetness from the priming sugar. I moved one crate to the living room to warm up and help with carbing but after a week, its still pretty Much the same.
Am i going to have to open 50 bottles and put new yeast in??
Any thoughts/tips?

Cheers

Probably a little cool in your cellar - three weeks at 21C is the optimum for speed carbonating bottles.

15C I'd expect the yeast to stay dormant. Try getting them up to at least 18, but if you can get to 20 it'll happen faster.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

Thanks Jocky, that makes sense, i'll put them back in the fridge and warm them up. Never realised they needed so long and at such a high temp, always seemed to work fine before but i must never have stored them there in the winter.
Glad to hear the yeast will wake up with some heat
Cheers!
