Last stout I brewed I added molasses at flameout - not enough to make it cloyingly sweet but it was definitely there as an after taste. I'll try and dig out the recipe if you want it?

Have I got the balance right? As Orlando said choc and black Malts use in small amounts can work together, I've also read this elsewhere and using Crystal can add some plum or deep fruit notes have I used too much too little could I add anything else?
Also I've now read at least 3 articles suggesting Centennial as a very good hop for big/American stouts...

Looks a good starting point to me because it isn't extreme, this means when you try it you will have a better idea in what direction to take it. If you want it roastier then you can up the RB and or black, if you want smoother you could use Carafa 3 instead of the black. I would do this before introducing oats or flaked barley as that is a different dimension, get the base right for you then riff.Battleaxe wrote:

Looks good to me too. I tend to go for 8 - 10% RB/black in varying proportions and sometimes add a bit of choc. Then I add one or two other things, an adjunct like flaked barley, oats or TW, and/or a few % of specialty malt like crystal, Crystal rye, chocolate rye, Brown malt etc. I keep meaning to try roasted wheat.

Good advice there about changing things slowly. What I generally do when brewing a style I don't have a lot of experience with is first brew a formulation that I know will at least give me a good beer ('cause life is too short to drink crap beer, right?). After that I start pushing things around depending on how it comes out, my personal preferences plus results from competitions. My "go to" recipe book is that deal the Great Jamil wrote now several years ago because everything comes out good and there are a lot of different styles in the book. For English stuff I consult that Real Ale book by Wheeler (although I wish he had gotten into the various English yeast strains). Of course, if you go that route you need to keep good notes otherwise if you are like me you will forget exactly what you did. Over the years I have developed a large three ring notebook full of beers that have worked well for me in the past. The hardest thing for me is to avoid screwing around with stuff that has already proven itself.

Our Local club "liffey Brewers", are in the process of brewing an RIS and adding it to Iaphroaig whisky barrels. The beer is fermented going from a 1098 to average 1033. finishing target was lower but only one brewer got there and he had separated the dark malts to mash them. Beer tastes great,lovely and rich and I hope will be even better after a stint in the barrels.
20 liter batch,
5.30kg pale malt,
1.00kg Roasted Barley,
0.45kg Black malt,
0.45kg Crystal 60,
2.00kg Brown Malt,
0.45kg Chocolate Malt,
35gr Columbus/Tomahawk/Zeus CTZ 15.6% 60 minute boil,
100gr East Kent Goldings 5% 10 minute boil.
2 packs of US05 yeasts.
20 liter batch,

Brewed this in the end, with a health amount of centennial in the boil and 20g at the end below 80c it smells like a chocolate Turkish delight at the moment!
Missed boil off by roughly 500ml so it was 1.062 instead of the anticipated 1.069 so unfortunately it will only finish at a possible 5.8% instead of 6.5% hey ho I'm not crying over it.
I did find it had thrown its airlock across the brewfridge at some point today it had also been sick on the ceiling aswell, replaced airlock came back three hours later only to find it attempting the same thing... A blow off tube was installed!
