Just brewed this one with 8.5 % hops , Gregs brew said with 5% hops , so I halfed the 60 min hops , nice brew but I think still a bit too bitter

I tend to bitter all my beers these days with magnum, and add flavour hops at flameout/hopstand. I find this helps me keep the bitterness to a range that I enjoy, whilst getting that hop aroma.

I do much the same except I tend to use Warrior for bittering - it's got a good "clean" bitterness that I enjoy and isn't too expensive.

Might have a look at Warrior once my current bag of Magnum runs out.
