"Juicy" IPA/pale ale
I've been drinking a lot of Beavertown Neck Oil lately. I love it's hoppiness and general lack of the overwhelming bitterness I've typically associated with hoppy pale ales. It's reinvigorated my interest in hoppy beers, and the NE IPA style in particular. The focus on hop flavour, rather than IBUs seems to be right up my street. With this in mind, I brewed an attempt at this style last weekend, here is the recipe:
19L batch
OG - 1.049
IBU - 30
Belgian pale ale malt - 65%
Flaked Oats - 15%
Wheat malt - 10%
Torrified wheat - 7%
Carapils - 3%
Mashed at 69c for 90 mins.
Water adjusted to give 5.4 mash pH, Ca - 130, Cl - 195, SO4 - 64.
60 min boil
Magnum - 60m addition for 30 IBU
25g each of Citra, Amarillo, and Galaxy for a 60 minute hopstand following chilling to 80c
25g each of Citra, Amarillo, and Galaxy for 14 day dry hop starting 7 days into fermentation.
Fermented using WY1318 (supposedly the Boddies strain) for 21 days (3 days at 18c, 2 at 21c, 16 at 23c).
The idea was to create a beer with a soft bitterness, full mouthfeel, and massive hop aroma/flavour. Anyone care to comment on how you think this will turn out?

What do you use to control fermentation temp

Inkbird 308 and an old fridge/tube heater. It suits my lack of electrical skills.

I was given this as a neck oil recipe. I've tried it from someone who made it was very nice!! Not tried to make it myself yet.

BL,
Isn`t 14 days a bit long for a Dry Hop?
Is that what you normally do?

I've not made that recipe. But have drank it from the person who gave it me. It was very very nice. Just quite costly for the amount of hops.

As a yeast alternative try Wyeast American Ale II at its higher temp range, I find it works well. https://www.wyeastlab.com/rw_yeaststrai ... .cfm?ID=11
I usually dry hop for 2-3 days at these rates.

Re: "Juicy" IPA/pale ale
I was worried about it on my previous pale ale, but it turned out really well. I figure people dry hop for longer when it's keg hopped, so I'm just going to roll with it.WalesAles wrote:BL,

Just been going through the recipe, that's a lot of hops! I wonder how much volume you'd lose from absorption.Bunglebrewsbeer wrote:I've not made that recipe. But have drank it from the person who gave it me. It was very very nice. Just quite costly for the amount of hops.

That's why I've never made it myself. Cost of the hops I could make 2 or 3 brews with.
