AG#14 - German Pilsner

Really enjoying brewing lagers at the moment, decided to get this brewed so it’s ready for the festive period (traditional I know). Decided to stick to a fairly simple recipe with a small addition of Melanoidin to provide a touch of maltiness and mouthfeel.

Had to break out the no-cube chill as my starter (3 steps) wasn’t ready when brew day approached. Made no water treatment additions as my water is pretty close to what I wanted already.

Recipe Overview

Style: German Pilsner (5D)
ABV: 5%
Original Gravity (OG): 1.052
IBU's (Tinseth): 30
Colour: 9.2 EBC = 4.7 SRM

The Grain Bill

97.5% Pilsner Malt (4 EBC = 2 SRM) 5991 grams = 13.21 pounds
2.5% Melanoidin Malt (70 EBC = 35.5 SRM) 156 grams = 0.34 pounds


The Hop Bill

21.9 IBU Hallertauer Mittlefruh Pellets (5.1%AA) 48.3 grams = 1.705 ounces at 60 mins
8.1 IBU Hallertauer Mittlefruh Pellets (5.1%AA) 35.8 grams = 1.263 ounces at 15 mins
0 IBU Saaz Pellets (2.9%AA) 35.8 grams = 1.263 ounces at 0 mins


Chilling & Hop Management Methods

Chilling Method: No Chill Cube

Fermentation & Conditioning

Fermentation: WLP830 German lager yeast for 14 days at 10.5 C = 50.9 F
Diacetyl Rest: 3 days at 16.5 C = 61.7 F
Secondary Used: N
Crash-Chilled: Y

Special Instructions/Notes on this Beer

"Diacetyl rest: 75% attenuation 1.023 (for 3 days) then slowly decrease temp (2.5°c every 12 hours) Pitch yeast start slightly below ferment temp (8°c)
