Once the NZ Pale is out of the brew fridge this is happening. I've never brewed a RIS before so any advice is very gratefully received. Should I throw some coffee beans/vanilla pods in the dry hop too? I've also got a large bag of Jack Daniels barrel chips which are looking at me too?! What do you think of the basic recipe. I often get dank orange notes from this batch of Summit and I thought it would work with a RIS. But perhaps it may clash with a coffee addition? Thoughts welcome.

Just my opinion, but if this is your first RIS then I think it better that you stick more to your base recipe and resist the temptation to make too many "exotic" flavour additions.
On the other hand you may want to split the batch , do half with the vanilla and coffee beans etc. and the other half without any additions.
I find that you get the most out of vanilla beans when you soak them in liquor for a week or so prior to addition.

I hear ya. I think I'm gonna brew it and simply add some bourbon barrel oak chips at the end of primary for maybe 5 days, so no further coffee or vanilla. I would hope the subtle oaking wouldn't necessarily compete with the malts or hop flavour/aroma.

That recipe is very similar to my last brew which i have just started to crash cool, only mine contained no roasted barley but oats instead, i'm calling mine a porter. I added a couple of vanilla pods and a tub of oak sherry cask chips that i have been feeding bourbon for a couple of months.
With these flavour additions i went very light on the hops, just some Progress bittering additions and 25g of progress again at 5 minutes, i would do one or the other.
