Maybe it needs to be right on top of the kettle. Our microwave hood is only 400 CFM and extracts the steam perfectly when I’m brewing but less so when boiling pasta in a stock pot.
Sommeliers recommend that you swirl a glass of wine and inhale its bouquet before throwing it in the face of your enemy.

+1 extraction needs to be built into a lid, that also must have air 'in' ports.
I designed one with a series of small holes drilled around the outside, which also has the effect of preventing boil over.
Hoods IME let to much stream get away.

The plywood skin is complete. It feels like it's starting to take shape now
A fine beer may be judged with only one sip, but it's better to be thoroughly sure.

Yes, the window swings open upwards and I will have a couple of stays to hold it fully open. A wide shelf will be installed at sill height on the inside so that I can sit on my bar stool with a beer and watch the world go by.

I had an old electric cooker hood setup, only to notice after it had a good steaming the grease within the filter melted and dripped into my boiler!
Just be mindful of the condensing steam dripping...

The interior as it looks at the moment. The electrician will be in this week to do the first fix and then I can start the insulation and plasterboarding. The floors are scorched scaffold boards.

That is going to look great when it is finished. Just put in way more electric points than you need and probably a network cable too.
I need to get my butt in gear and finish my brewery room but still finishing off the garden etc from our house build.
