Confused what temp to store bottles and kegs?

I have been reading about "beer fridges" on this forum,, what is the best coditions for maturing barrels and bottles, I just leave them in the garage.

you dont absolutely have to mod a fridge.

I have a cheap fridge (£100) and a digital thermometer on the outside, and leaving it on low it floats around 11.4 and 14C

RESULT

though to be fair on a cool night it dips to 8-9c so switching off over night sorts that, it wont float above 14 while off

out of interest.. well space!

when cold conditioning, as I am new to it, how long should something be "chilled" for before being fine just left at room temp again until being knocked back?

basically there is not enough room in my fridge for everything I would ideally have in there, so in the name of rotation, would you say a minimum of 2-3 weeks at cool conditions would be enough before putting back out at room temp?
