I have to agree with you there mate, there hasn't been a beer in this house that has disappeared as fast as a batch of Styrian S....

What quantities of hops do people use just before turn off and dry??? Mine wasn't as hoppy as I wanted...

Depends on the beer, I normally use twice what is specified in a published recipe for late hops (I do not dry hop). I've had promising results from leaving the late hop addition until I've chilled the wort to below 80C rather than adding them at switch off.

Of course the quality of the hops is the deciding factor, When using some imported NZ Saaz B, you had to be really careful about the quantity of late hops as these were really fresh and could really unbalance the beer. I do find that hops available through the Homebrew market have lost the 'edge' and buying in bulk from Farams (5Kg min order per variety) just after the harvest is one way of getting great quality hops.
