Hi,
Halfway through brewing a lager (8 gallons) and realised that i have 2 packs of yeast but there different types (saflager and youngs).
Is it alright to use 1 pack if i make a starter, or pitch two packs, or pitch 2 packs with a starter?

Is Youngs a real Lager Yeast? Or is it (as I personally suspect, but don't know) a Bottom fermenting ale yeast (ala a steam beer yeast)?
I know the S23 is a real lager yeast, I would probably go with pitching a Daab Flying starter into the wort at 18C before cooling down to the proper fermentation temperature. You won't be totally clean, but it will still be a good beer
