wyeast 3068/ wlp300 for TC
Has anyone used the 3068 or wlp300 hefe weizen yeast for TC?
Someone on another forum had tried a number of different yeasts, wine (montrachet and cotes de blanc), ale (Thames Valley) and a cider yeast (wyeast 4766, quite bland apparently).
He raved on about both wyeast 3068 and wlp300 (well they are the same yeast after all), said it gave an almost tropical fruit flavour , super tasty and head and shoulders above the rest.
I know wlp 775 gets good press here but i have the 3068 sitting in the fridge ready and raring to go.
While on the subject of cider has anyone tried the cornwall cider 'rattler' its a cloudy cider with a bit of sweetness (v. tasty, but v. expensive £5 for a 500ml bottle in the bar) would love to make something like it.

I think i might knock out 10L of this at the weekend when doing my hefe.
The poster on the other forum also described it as an appley jolly rancher (sounds nice)
What kind of yeast did you use for the other batch of TC?, be sure and post on the taste diff if you have time.
PS if you have any spare wlp775 lying about im sure i could give it a good home
that way i could do a taste test comparison, maybe save you from having to make an inferior hefe version (thats if the 775 kicks its arse).

Gervin no3 champagne yeast, i've had a few sips and it tastes good. It won't be a scientific comparison though because we used different brands of apple juice in the two batches (the slightly better tasting juice was used in the WL version)

If I remember i'll harvest a bit off when i'm racking but i'm planning on using the sludge for a 5 gallon batch.

Gervin no3 champ yeast
Bottled with 40ml of juice per 500ml bottle.
Once it's matured in the bottle for a month it's fantastic, infact people are drinking it faster than I can make it!
i was going to look into 4783 Rüdesheimer which is a wyeast strain for reislings and fruit ciders the blurb from wyeast below sounds ideal. That said H&G don't stock it and i'd probably have to wait an age for it plus its probably pretty expensive. If i was trying the gervin no.3 i could have it this weekend for about a quid from the LHBS, decisions, decisions!!
