Having a go at another dark n complex one today after the Old Peculier from last week looks so promising 8)

Today is my take on a modern Porter - Gail Porter :lol: For those of you who don't know, well, she used to be a fairly well-known UK celeb and featured in an interesting piece of advertising for a men's magazine seen here.

It goes a little like this:

Gail Porter

Size: 23.0 L
Efficiency: 75.0%
Attenuation: 72.3%

Original Gravity: 1.055
Terminal Gravity: 1.015
Color: 29.6
Alcohol: 5.24%
Bitterness: 36

Ingredients:
5000.0 g Maris Otter Pale
500.0 g Chocolate Malt
265.0 g Black Malt

34g Northdown (8.6%) - added during boil, boiled 90 min
10g Goldings (5.8%) - added during boil, boiled 15 min
1.0 ea Whirlfloc Tablets (Irish moss) - added during boil, boiled 15 min
10g Goldings (5.8%) - steeped after boil
Danstar Windsor Yeast

Just waiting for the hot break to chuck the first hop addition in.

Sorry I didn't follow up... got embroiled in the end of the man u / chelsea game. 'Plenty of needle' as Mark Lawrenson would say :)

It went well, back to fly sparging until I can justify getting a bigger mash tun (I dropped it and it just, er broke, love :lol:). I don't really bother with efficiency these days but ended up with 25l at 1.055 in the fermenter at about 5pm so I is happy.

Having not done a porter/stout style before the unfermented beer didn't taste quite as bitter-roasty / coffee / chocolate as I might have expected, but then again it will all change once the yeast has had its way with all those sugars I guess. Anyway, lovely rich dark chocolate wort, surprising taste from the Northdown hops - really quite pleasant and seem to go well with Goldings. Sweet, like the Gail Porter of old.

Will let y'all know how it drinks 8)

Squeezed Gail into a cornelius keg plus 7 bottles tonight, quite an interesting beer already but will benefit from just a little time smoothing out. The dark roast malts dominate, and you can't really make out too much hop flavour or aroma, but the tastes in the beer seem quite well balanced nevertheless as there seems to be enough residual sweetness to balance the bitterness. Very much looking forward to when this one is fully ready 8)
