Hi All.
I don't know if anyone has tried any of Allgate's ales, but they have a common distinctive flavour that I can only describe as tasting like malted milk biscuits.
I'm looking to try and recreate that flavour but most of my experience is with hoppy beers rather than ones with a pronounced malt character.
Anyone got any ideas? I suspect it's using a large amount of amber malt, but I'm concerned about an excess bitterness if I use too much.

Maybe some biscuit malt? I don't know for sure as I have never used it but this is supposed to add a mild shortbread type flavour

From what I gather, what you're tasting is simply high-quality, fresh Maris Otter pale malt, which the brewery requires as the base malt for all their beers.
