Post by Gurgeh » Sun Nov 18, 2007 5:40 pm

One of my favourites, though i've failed to find a recipe on here for it.

Could someone with 5 minutes and GW's book please help?

Thanks

My recipe is on here somewhere, basically its BYORAAH with a little tweak at the end in terms of hops.

I've managed to succumb to only one bottle so far (its meant to be for christmas) and its actually pretty close 8)

It seems like a lot of roast barley, I don’t remember it being that roasty, but enjoy

Sorry did not see the GW BYORAAH, looks good

Some dark crystal malt would be a good choice if you can get some

The maltose syrup & invert cane sugar - can i just swap that for a tin of black treacle and up the pale malt to hit gravity?

Also, I'm thinking I will swap the challenger for target (12%AA) and will chuck in 20g goldings in the last 15 mins shoudl be a little more bitter (39 IBU) and have just a little hop flavour to boot.

Using SO4 on this beer - one sachet in a DFS, or two?

DIRC there's some concern about target and so4 being used together?

From GW BYOBRAAH

OG 1058
25 L

Pale malt 4480gm
Crystal 610gm
Torrefied Wheat 310gm
Black Malt 145gm
White Sugar 620gm

Fuggles 42gm
Challenger 25gm

I used Wyeat 1968

Mash 67 - 68c 90 min
90 min boil

I've done 23l of this as part of my Christmas stock, tastes alot better than the original bottled version.

Cheers

Very nice Bazil

do you have the efficiency or that brew

and the IBU's?

The book says 29 IBU and I think GW's efficiency is based on 75%.

Mine worked out at 33 IBU, I'm a bit lazy when it comes to correcting IBU's for my hops and the efficiency was 79%.

I've found a harsh bitterness results , but that was in a pale ale. Discussing this with other brewers over a pint of the said beer one said. "That explains it, I thought you'd nicked a keg of mine, which was brewed with Target and SO4" I have soft water he had moderately hard, I suspect the other thing that might have influenced my beer was that it was a small beer made after a barley wine - possible tannin extraction.

Hmmm. I just made a strong bitter that was supposed to be only around 33 ibu, but it came out VERY harshly bitter. Mine had Target and S-04 too.

This is mine

The comments I had about OP II was that it was too roasty, so for III I went for an all Carafa Special III roast malt and while it was nice it was a little too smooth so for IV I've cut back the Carafa III and added a bit of Chocolate and Amber.

Theakstons use a special grade of Sugar made for them by Tate and Lyle, prime this with 2oz of treacle, which is not a substitute for the original sugar but is acceptable
