In the copper;
maltose syrup500g
Inverrt cane sugar 500g
challenger (start)30g
fuggles (start) 35g
last 15min 12g fuggles
mash @ 66c 2h, boil 2h

250g roast barley
250g crystal
1kg soft dark brown sugar
100g black treacle
60g fuggles
5 sweetner tablets
Boil everything for 45 mins.

My recipe is on here somewhere, basically its BYORAAH with a little tweak at the end in terms of hops.
I've managed to succumb to only one bottle so far (its meant to be for christmas) and its actually pretty close

The maltose syrup & invert cane sugar - can i just swap that for a tin of black treacle and up the pale malt to hit gravity?
Also, I'm thinking I will swap the challenger for target (12%AA) and will chuck in 20g goldings in the last 15 mins shoudl be a little more bitter (39 IBU) and have just a little hop flavour to boot.
Using SO4 on this beer - one sachet in a DFS, or two?
DIRC there's some concern about target and so4 being used together?

I've found a harsh bitterness results , but that was in a pale ale. Discussing this with other brewers over a pint of the said beer one said. "That explains it, I thought you'd nicked a keg of mine, which was brewed with Target and SO4" I have soft water he had moderately hard, I suspect the other thing that might have influenced my beer was that it was a small beer made after a barley wine - possible tannin extraction.Gurgeh wrote:DIRC there's some concern about target and so4 being used together?

This is mine

The comments I had about OP II was that it was too roasty, so for III I went for an all Carafa Special III roast malt and while it was nice it was a little too smooth so for IV I've cut back the Carafa III and added a bit of Chocolate and Amber.
Theakstons use a special grade of Sugar made for them by Tate and Lyle, prime this with 2oz of treacle, which is not a substitute for the original sugar but is acceptable
