25L at 1.052, target was 1.056 so a bit short... US-05 pitched.

Thats it for a bit now, I can't do any brewing until I've got a keg coming free, they're all full and I'll have no bottles left either once the Largs Thistle gets bottled.

I never worked out why we get so caught up about the colour of the brew anyway, surely its all about the taste.
I never remember standing in the pub going jaysus thats a fine tasting pint but the colour is awful :lol: sure we'd be a like a bunch of women fussing about different shades of tourquoise soft furnishings :lol:

Hope it tastes great wez, stuff the colour.

A question : one week on 1 pack of US-05 has got this down from 1.052 to 1.008 (84.5% attenuation) and it's still seems like the yeast is active, there are small particles still moving around in there and shooting up from the bottom. I've never used US-05 before is this normal :?: Tastes great :D

US-05 is known for being a very attenuative yeast - although it's said to be similar to WY-1056/WL-001 it seems to be more attenuative than either.

05 doesn't floc very quickly, so I'm not too surprised that it's still floating around. I often get little bubbles of CO2 popping free from the yeast cake and rising to the surface coated in gunk, too. The bubble hits the surface and the gunk then drips down to the cake again.

All that is to say, in my little experience, that the yeast seems to be doing what it always does for me. :D

I'd agree here, my experience with US-05 is that it will attenuate around 5% more than WLP001. Nothing scientific of course, it could just be down to the larger pitching rate in a packet of dried yeast.

Yipe it hangs about a bit, like an unwanted guest at the end of a party, he helped make the fun but when its over you can't wait to see the back of him :D

Like all highly attenuating yeasts he stays ins suspension, not like those lazy buggers that produce all that toffee tasting beers i like :D

Cheers guys, glad it's doing what it should be, i'll bottle some at the weekend then move it to the fridge with some AF to clear it up. 8)
