500g Wheat malt
60g Northnown 90 min
30g Bobek 90min
30g Bobek 15 min

12 gallon brew
IBU 34.9
OG 1058
SRM 6.5

10% rye is pretty safe IMO. My Black Wheat Beer has 22% Wheat and 23% Rye, and was in danger of being really thick and gloopy so I mashed the Wheat and ry separately at 45C for 30 minutes then up to 68C before adding to the main mash (45% Rauchmalt, 10% Carafa Special III ) for an hour.

Its a nice black beer but the smoke phenolics probably overpower the Rye TBH
