Too Late To Rescue?

Post by toshlad » Thu Jul 31, 2008 10:25 pm

I'm currently 5 days into brewing the coopers aussie stout and i had a gut wrenching realisation that i didn't add the sugar when mixing the wort!!!!

Can't believe i did this as it was out of the cupboard and ready to go but it just got left behind. I'm wondering if it is too late to throw in the sugar (dissolved that is) or am i best throwing it down the drain and starting again?

add it and stir up the yeast.

Added 1kg of sugar and stirred it up, so now I'm hoping for best! At least it's the last time I'll make that mistake!!!

Took reading of 1022 after adding the emergency sugar, so can anyone tell me am I best just leaving it til it drops below 1006 or lower before priming?

Given the circumstance - leave it for a few days and check the gravity. If you're below 1010 then you might be ok. Taste each gravity sample you take though and see if it tastes like beer ;)

Worser things have happened and you might just get away with it!

I'd be tempted to leave it for ten days after you added the fresh sugar as the yeast will jump into life, releasing lots of diacetyl in the process. At least you should end up with a very bright beer
