Oak Wine.

This was an interesting one, im one of those people who enjoys watching huw fearnly wittingstall an the various things he comes up with or introduces. (judge me as you will, i dont care :D ) One of his programs the other week had him meeting a woman that made her own wine an to do this she used oak leaves... I was a bit drunk so didnt make too much of a note of what was involved. I guess a demi oak leaves sugar an yeast. Im quite keep to try it as im enjoying the trial an error aspect of this brewing. so heres the plan come spring (when i can get oak leaves)

1kg oak leaves cleaned then boiled in a gallon of water.
add 1k of sugar
boil some more, strain off into a demijon add yeast and leave to ferment.

what ya think? I guess its a similar proccess as nettle beer.... which is something else i want to try ^^

I have a 1935 book with an oak recipe in it (and also a beer with chicken in it) - i will dig it out.

Yeah, i found this one in an old brew book my dad had. was thinking of trying it too. but you need to include a couple of lemons or citric acid for the yeasties to work. god knows what it will be like...

i have just tried my rose hip wine. it has to be the most delicious booze i have ever made. used the same recipie you suggest. get them boil them add sugar (add lemons) straine and stick in the dj. im going to do 5 gallons or more next october/november!

There's a recipe in C.J.J. Berry's book First Steps in winemaking, which is full of random recipes and well worth buying. Haven't got my copy on me but here's a thread on another forum I found:

Might want to reduce the sugar a bit tho, I reckon he uses too much sometimes (alcoholic is nice but not at the expense of flavour and body).

My Dad did Oak Leaf Wine years ago. Rocket fuel as I remember :out

Secondary FV: As yet unnamed Weizenbock ~7%
Bulk aging: Soodo: Grocery store grape juice wine experiment.
Drinking: Evan Williams bourbon, Dewar's Scotch (white label), VO Canadian whisky. Various Sam Adams beers.
