:oops: sorry guys coopers rocks just popped mine into fv today with the coopers dark liquid malt extract filled fv up to about 21 litres my og is 1046 so if it ferments down nicely it should be a bit stronger than my first batch. which i have to drink up to make room in the keg for this new batch...its a hard life :=P be nice to compare the difference from my first batch with medium spray malt to this dark lme, i might prefer the first who knows will have to try every combination so as to make a judgement ...let the testing begin :lol:

Not as yet, mate. I'm so bloody conservative it's unbelievable. In fact,looking to get a couple more batches on, I went into my store room and absent mindedly grabbed some packs of SM. When I got out to the light of the kitchen, I found I'd brought out Dark, where as I customarily use Medium.

Straight back to the store That went! :roll: And that pretty well sums me up. I have a load of DSM out there. I'm perfectly content to have it and I Will use it. But only (most likely) when I've used up my stocks of MSM and so am forced to.

I guess, thinking about it, I don't like change, just for changes sake. Saying that though; I think dropping the level is an extremely good idea. One which I already had planned for my own next couple. In fact, I may put a keg of such away. Keep it for visitors ;)

Now then lads,

I've been reading this thread with much interest over the last few days. So much so that I popped down to the hop & grape in Darlo to buy some of the fabled coopers stout. Also bought coopers dark ale & a tin of both Coopers dark malt extract & amber malt exract.
The dark ale is supposed to resemble old perculiar? don't know what the stout is supposed to be like? (Taste anything like "G"?) Anyway, which combination do you reckon I should try first?
Come on lads your the experts, - dark malt extract/stout dark malt extract/dark ale stout/amber extract, dark ale/amber extract.

But, ye first need to read a whole lot more of the Reams of stuff we've been putting up here about 'The Kit!'. (One more reason why I mused about the (im)possibility of the rulers of this place just giving us Coopers fiends a sub board of our own. But, hell; If they did that? Ye questions have been answered before. What the hell though. Here we go again:

1/ Guinness is Guinness is Dish Water, compared to Coopers Stout. Plain Truth! Guinness is the Microsoft of beer drinking. Micky / Bill Gates sends out his automatic updates. Guinness send out their 'Guinness Gestapo'. Each with the avowed intention of fine tuning the exact sameness of the end products we 'enjoy'. Bland as shit!

2/ If Coopers wanted their Stout to taste like it does, plus a can of their Malt Extract?; Why don't they stick a can of their Malt Extract in with each of their Coopers Stout kits? I've never personally made Coopers Stout that way. Thus I wouldn't have a clue what it may taste like that way. I just make Coopers Stout. Pretty much period. As it says I should on the tin.

My only divergence is to use Medium DSM in place of any sugar. I Don't use " Beer Enhancer ", " Dry (what ever it is) Enzyme ", treacle, lemon peel or iron filings. Quite why some people here seem to want to know what adding Dog shit to their Coopers Stout kit might do for the flavours, before they've even tasted the Natural, as Coopers intended it to be, drink? That I'll probably never know.

Anyway, to get back to ye direct questions? Coopers Dark Ale? I have a kit in the wings. Seems a goody. Haven't made it yet. Can't comment. But I'll be trying it with MDSM ~ I feel that saves swinging any balances too far ;) Then, and only then, I may consider 'Darkening' it. (Frankly? If it Does taste anything like Old Pec'? F*CK! :shock: Imagine Old' Pec, but Darkened!!! Oh good god; That's Got to be heaven!)

Coopers Stout? Simple: Pop back to ye LHBS and grab a kilo of MDSM. Use that. Then at least ye'll be singing from the same hymn sheet. It's like most anything in life: Master the basics. Then add ye own tweaks and finesses. How can ye 'Improve' those indescribable tastes, till ye've tasted them?

Please. Trust me on this: Brew it 'as is'. Then see if ye imagine it Can be 'improved on' :wink:


As for those cans of extract? Save them for later. Or ask the " Extract " lads what they think? Maybe, with the right hops, ye could discover something else to hit ye personal spot? But first, please, just try and taste the bench mark we're all on about here; " Coopers Stout ".

rubber flopper??? depends on how much i drink ,but i am sure there is a cure for that if you see your doc or helpful internet supplier ha :lol:
the larger fv is working a treat its licking the lid but not escaped yet ,nearly cracked the lid shut but the bubbler went ballistic so cracked it open a bit again.my keg should be freed up by the weekend! mmmm wonder what it would taste like matured for 4 weeks??!! i think 3 days to 14 days is more than adequate ...dont you think? :mrgreen:

Thanks for ye pearls of wisdom on the best way to brew coopers stout.

I've just bought some medium spray malt at lunchtime from the indoor market in Durham so I'll try your 'benchmark' recipe first. Hope its good! My FV's still full of Woodfordes 'sherry', so I'll have to transfer that into the cornie first and set the black stuff away next week.
Be interested to know how the embalmer gets on with the dark extract though .Will it taste as good as the spraymalt version?
As they say variety is the spice of life, change is as good as a rest etc etc. :idea:

PS You've got a point about "G". A lot of people think guiness and stout are one in the same and don’t realise stout can taste any different.
Also last time they had a 'G' promotion night down the local the 'G' girls were all dressed in uniform, but looked nowt like the Gestapo.-Big enough T*TS to join though =P~ - better leave it there).

Hey Ditch and other Coopers Stout fans...

I had a follow up exchange with Paul Burge at Coopers who revealed that the Coopers Brewmaster Irish Stout Kit was specifically developed to be somewhere between Guinness and Murphy's...thought ye might be interested.

I think they've got a typo on the above link that suggests the kit is 560 IBU's! :shock: :mrgreen:
