1/ Guinness is Guinness is Dish Water, compared to Coopers Stout. Plain Truth! Guinness is the Microsoft of beer drinking. Micky / Bill Gates sends out his automatic updates. Guinness send out their 'Guinness Gestapo'. Each with the avowed intention of fine tuning the exact sameness of the end products we 'enjoy'. Bland as shit!
2/ If Coopers wanted their Stout to taste like it does,
plus a can of their Malt Extract?; Why don't they stick a can of their Malt Extract in with each of their Coopers Stout kits? I've never personally made Coopers Stout that way. Thus I wouldn't have a clue what it may taste like that way. I just make Coopers Stout. Pretty much period. As it says I should on the tin.
My only divergence is to use
Medium DSM in place of any sugar. I
Don't use " Beer Enhancer ", " Dry (what ever it is) Enzyme ", treacle, lemon peel or iron filings. Quite why some people here seem to want to know what adding Dog shit to their Coopers Stout kit might do for the flavours, before they've even tasted the Natural, as Coopers intended it to be, drink? That I'll probably never know.
Anyway, to get back to ye direct questions? Coopers Dark Ale? I have a kit in the wings. Seems a goody. Haven't made it yet. Can't comment. But I'll be trying it with MDSM ~ I feel that saves swinging any balances too far

and only then, I may consider 'Darkening' it. (Frankly? If it Does taste anything like Old Pec'? F*CK!

Coopers Stout? Simple: Pop back to ye LHBS and grab a kilo of MDSM. Use that. Then at least ye'll be singing from the same hymn sheet. It's like most anything in life: Master the basics.
Then add ye own tweaks and finesses. How can ye 'Improve' those indescribable tastes, till ye've tasted them?
Please. Trust me on this: Brew it 'as is'. Then see if ye imagine it Can be 'improved on'
As for those cans of extract? Save them for later. Or ask the " Extract " lads what they think? Maybe, with the right hops, ye could discover something else to hit ye personal spot? But first, please, just try and taste the bench mark we're all on about here; " Coopers Stout ".
