Recipe to use up different malts

Post by ADDLED » Fri Aug 07, 2009 10:25 pm

Hi, ive recently brewed some nice AGs ranging from Summer Lightning clone, Best Bitter and Stouts and they were all really nice, and i have the end of a sack of malt left and some other stuff so was wondering what to do with em.
Ive got maybe 3kgs pale pearl, 1kg each of choc and dark malt and a kilo of roasted barley, but ive also got a kilo of caramalt that i got a couple of months ago but never used. Got a range of hops too from fug/EK gold/chall/north/bobek/aurora.

Any ideas what to do? Im really interested about the caramalt and what flavours it gives. I know i bought it for a reason but now i cant remember what for :)

Oh i also have about a kilo of cornflakes, so not sure if they will help out

what about a Hobgoblin recipe?

I've got a few clone recipes for this but most of them use pale, choc, carapils (or caramalt) bobek (styrians) and fuggles, you might need some crystal.

Caramalt is similar to Carapils, giving and retaining head formation, and rounding the flavour off.

hi Garth, tks for the reply. Ive got crystal - i forgot cos ive been brewing all pale beers and stouts but there a kilo or two in the malt bin.
What does the caramalt offer for flavour? In colour it seem like a lighter version of crystal.

to me it adds a rounded fuller smooth malt flavour, and the bonus of the head retention

Ive just done a "use 'em up" brew today. Different ingredients so no help I'm affraid :? This is part of the fun......who knows what it will be like......can't wait.

Garth, just to stray slightly. I noticed you list a 60 min boil. Others swear by 90 mins. I couldn't decide so do about 80 mins  Is there a theory behind it (different brews perhaps)..............oh, and Jim says you are the guy to speak to about micro lights. Sorry to go off thread

I always used to do 90min boil then I changed to 60 and found little difference apart from geting finished half an hour earlier and using a tiddly bit more hops.

I'm probably going to start doing 90 again, and mash for an hour instead.

Microlights? that was a while back, however did you get talking about them....?

I mash and boil around 80 mins each.........usually hit 80 to 85% efficiency. Itake your point on the bittering, but I reckon all the bugs are well dead. No doubt there are other reasons, but it works for me!

The microlight topic was something I showed an interest in on my "what's your hobby" thread. Not sure I want to go right into it but have often thought of trying it out. Its got to be safer that racing motor bikes!
