I agree Joe it will get better and mellow with age! Celia hops may be worth a bash for your slightly fruity beer work well with a simple malt bill, Very similar to bobek! I've just done a brew with the Pacific gem and partnered up with challenger, will hopefully be nice and bitter, getting some nice aroma from the FV!

Thanks guys, straight out of a kitchen cupboard no chilling and drank at room temp. Sublime.....and the souffle was nice. :)
