Ah OK, go for it. I like to think I know what I'm talking about when it comes to hop identification but have been proved wrong on MANY occasions :D

Don't take the website as gospel, by the way. I asked James Watt about the hops in new punk IPA and he said Centennial, Simcoe and NS. So I suspect they don't keep the website up to date with the latest recipe.

Thought I'd post back with the "recipe" I eventually settled on.

1.7kg Coopers Australian Pale Ale,
1.5kg Coopers amber LME,
US-05 yeast,
250g medium Crystal,
21l

Hops
15 mins - 25g Nelson Sauvin, 25g Amarillo (total 50g)
Dry Hop - 30g Simcoe, 25g Centennial, 20g Ahtanum (total 75g)

I've only a few bottles of this brew left and I'm trying to make them last. It's absolutely outstanding. I still haven't done a side-by-side comparison with 5am Saint yet, but I'm pretty sure it's well within range, especially for a kit brew. Though it doesn't have the slightly "catty" Simcoe aroma that the original has.

It's got lots of caramel sweetness from the amber LME and extra crystal, with a big burst of fruity hops. I think the Amarillo flavour hops are very important here.

Next time I would try dry-hopping it in two stages to see if it boosts the Simcoe aroma.

This is inspiring! I love Brewdog/American IPA type beers.

I think I shall have a go at this for my next brew! I'm a total noob, so can I ask a question - what format would I get "250g medium Crystal" in - a powder, or extract or something?

Crystal is a malt, you would steep it when making an extract brew, or mash it when doing all grain.

Hmmm. Would you maybe benefit from mashing a twinge higher (say 67°C) to give more body or would 66 be okay because of the other grains? Not 100% sure about that though. Recipe looks pretty tasty though.

It came out very tasty indeed. I can't remember what I dry hopped with but its being drunk way to quickly.

It did have a bit of a harsh taste early on but this cleared up after 4-5 weeks in the keg and now goes down easily
