A bit o' peat.......

Post by kck74 » Fri Mar 02, 2012 10:52 am

Hi all,

I got some peat smoked malt and Brambling cross from the Maltmiller and decided on this recipe.......

300g crystal
150g torri
120g amber
200g peat smoked malt
4kg MO

25g Columbus at 90mins
30g Brambling cross at 15mins
30g Brambling cross at 0mins

Would all this go together? Admittadley the other bits are a user upper, but has anyone got any experience of peat malt that aint in a porter? And I knoe its gonna be nothin like a Rauchbier  Please help...... Mash is on!!!!

Cheers

Kev

Have you used it before? It's meant to be overpowering if you use more than 1-2%.

Er............. no

I ended up putting 5kg of MO, so with everything else, it's 5800g so 200g is about, er...... 3% ?

So only just over Dave!!!

Well it's near the end of the boil now, so tuff if it comes out poo!!! [-o<

Cheers for thye reply

If you like some of the Highland Malted Whisky's then the peat malt will give you the peaty flavours.Personally its the only malt I hate.

Haha, tally-ho then!

I love a good single malt - the peatier the better. But i have read of even single malt-lovers saying peat malt's a bit funny - even rubbery - when there's too much.

I'll be interested to hear though, as i've fancied a peat smoked ale for a while but never had the courage to do one. I reckon if it's a bit too much it'd probably mellow quite a bit given time.

Quick update......

It's bubbling away nicely in the FV. Smells gorgeous! slightly fruity with the Brambling Cross possibly coming through :D Can't smell the peat yet, but it's early days yet.

Had a visit to the FV and.......

Smelt a bit sewery this morning, this seems to have gone by this evening. But there seems to be some clumps of beige material that's floating with the Krausen and then sinking to the bottom. Am I infected or is this just another weird yeast characteristic? I pulled a small sample earlier and it smelt of a nice brew, am I being a big girl????

beige material is cold break matter, it will settle out, if you can be bothered then hook it out with a sterile sieve, this would improve the flavour
