Summer ale fermentation time

Happy days!

Just about to start my first extract brew but I have a couple of questions first if anyone can help.

I am brewing the extract recipe pack summer ale from the brew uk website. (the hopps smell fantastic).

Has anyone tried this brew and how long at around 21 degees celscius will it take to ferment?

Why do they suggest a tea towel over the brew instread of just putting the lid on?

FV2: Coopers stout

Conditioning: Muntons gold midas touch, St Peters IPA, St Peters Golden Ale, Coopers sparkling ale and coopers Canadian blonde.
Drinking: Badgers golden champion as nowt of mine is ready yet :(

We would need to know what yeast is supplied with the kit and the predicted og.

Just had a look and it's s04 yeast and I don't use this strain much, maybe someone else can advise you.

For me, at 19 degrees SO4 gets most of the way in about 5 days, and will drop the last couple of points in another 3-5 days.

At 21 yours will be faster.

Tea towel is just an alternative to an airlock - stops stuff dropping into the brew, but allows gas and foam out.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

Give it at least 7-10 days - it will not hurt to give it slightly longer to allow the yeast to clean up after itself.

I tend to leave S04 to do its thing for a couple of weeks before bottling. Normally it's quite clear by that point, even without finings.
