AG#76 - Honey Zest Ale - Orange Zest and Crushed Coriander

Brewed this yesterday:

Honey Zest Ale
20-A Fruit Beer

Size: 25.0 L
Efficiency: 81.0%

Color: 21.6 (1.0 - 50.0)
Alcohol: 4.61% (2.5% - 14.5%)
Bitterness: 30.2 (0.0 - 100.0)

Ingredients:
3.8 kg Maris Otter Pale Ale Malt
300 g British Crystal 55°L
200 g CaraMalt MM
100 g Torrified Wheat
49 g Bobek (6.17%) - added during boil, boiled 90 m
20.0 g Crushed Coriander - added during boil, boiled 1 m
50.0 g Orange Zest - steeped immediately after boil
20.0 g Bobek (6.17%) - steeped after boil - 80c for 30 mins
300 g Rowse Honey - To be added to secondary
WLP002 - Fuller's


Sorry - no pics.

I wanted something tangy, zesty, citrusy, sweet and fruity for the sunshine and this is it. I also wanted it to have a nice maltiness hence the caramalt and crystal. The orangey goodness coming from the fermenter at the min is unbelievable. 50g was defs a good decision!!

OG was 1042

Will rack this beer onto honey in 3 weeks time. Reckon I could be enjoying this one in 6 weeks time. :-)

I split a summer ale and added honey to one of them, but used the jar on 13L, continued to ferment in the bottles slightly and the head was huge, best served very cold. Love orange and corriander in the Germanic brews. Good luck!

This sounds ace. I'm just wading into Randy Mosher's Radical Brewing and am thinking of giving one of his summer ales a go. Looks a lot like this.
Know which one I mean? Have you tried it at all? I've got a jar of the mother-in-law's mandarin marmalade burning a hole in my fridge. I might hijack your recipe if RM's isn't up to muster.
Shame you've got to wait so long but it'll make it all the sweeter!

Davey, I've never heard of randy Mosher, but it sounds very interesting. Will look into his stuff for defs. Mandarin marmalade sounds good man. Especially with it being home made. ;-)

Just had a sample. It's at 1020 and tasting very fruity. Bobek hops are there too. Gave it a rousing to help it along a bit too. So far, so good. :D :D

Sounds like you're on to a real winner! I was looking into sticking the marmalade into a dark winter warmer but that might change. Esp as she might be making a new batch come the Autumn.
Radical Brewing's a good read. Plenty to think about which is always a bonus. He has a chapter on blonde beers and they've really got me wondering.
I've got three in mind: coriander and ginger; lemon and ginger; and now coriander and marmalade. Perhaps a bit wheat-heavy too. I think I need more FVs to get things moving a bit.
The hardest bit about this hobby's the deciding!

Reliable as ever on the advice, Floyd! Thanks a lot, dude. Like the link and it's made up my mind - I'll go with the coriander/ginger brew.
By the way, I had a mix up with Thrifty Shopper once and they sent me roast barley instead of wheat crystal. As I hadn't used either up to then, I chucked it into a wheat beer along with some coriander and the results were awesome. I also ballsed up the fermentables so it ended up being very low in alcohol. A very pleasant mistake. Just had the last one at the weekend after over a year and it was still holding it's own.

Sometimes mistakes pay off nicely :-) Ginger and coriander is a good choice man. Make sure you document your brew day for us!

I'll second "Radical Brewing", I allways somehow asumed some of your inspiration came from there Floyd, you'd enjoy it for sure :)

Looking like another nice one, got something similar on the go at the minute with a combination of orange/lime zest, corriander, black pepper and bobek :)
oh and fermented with wlp550

Ooooooh. That does sound good Spud. I've used Grains of Paradise in my Belgians in the past. Has amazing 'black pepper' notes.

I did this brew a while back. Prob the most radical I ever did. I think it may be time to revisit... viewtopic.php?f=2&t=25500&hilit=+heather+ale

The book is good. It gave me the confidence to use lots of mulling type spices in my Christmas ale without the worry it was going to be fit for the sink.

Floyd, I am massively amazed by this revelation too. Many of your recipes (which I enjoy reading by the way) have been a little left field, which is no bad thing at all. I always assumed you were well in to the Mosher. He is a legend in my household. You need this book in your life, it is well written good to dip in and out of and makes you think "I wonder what that will be like if I chuck a little of this in..."

I am going to watch your recipes and brew days with renewed interest once you have read the book!

Back to the subject, this sounds like a good one. I'll be interested in final results.

Ok, thats a radical brew all right =D>

Have a few other funny ideas myself, I'll publish if they ever make it to the FV :lol:

I had read grains of paradise are quiet peppery allright. I also made a Porter 18 months or so ago with loads of black pepper, it worked out very well but took a while to mellow out, so drastic reduction in this pale brew, just a hint is all I want.
