My 6th Kit Coopers Mexican Cerveza

Hi all

I decided to do this kit today ready for drinking in the summer when we're back from Honeymoon. We're away for almost a month so it will have a good undisturbed maturation period!

Here you go.......

First the kit ingredients

The LME and the Beer Enhancer stirred in with 3 litres of boiled water

The wort start SG @ 1.042

The Wort temperature @ 22C

And finally the dried lager yeast Safale S23 sprinkled on top of the wort

Is S23 not a lager yeast??
If it is this one the fermenting range is 9-15C with the optimum at about 12C.
Have you some where cool to keep this? Maybe under the stairs or in a larder (hard to find those ambient temps at this time of year).
Anyway hope it goes well and you have a great beer to drink after the honeymoon.

The wort was further cooled to 15C in my bath of cold water and the fermenter is now in my brick shed at the bottom of my garden which is 14-15C at present. :D
Saflager S23 Genuine bottom fermenting commercial yeast for lager and pilsner beers production. High sedimentation, Final gravity medium. Temperature range: 11-24C, Ideal 11-15C.

The instructions also asked me to pitch in 2 11.5g satchets for the lower temperature :wink:

If the temp rises in the day I'll place a wet towel over the fermenter. If the temp drops at night my electric heater is set at 12 degrees.

Thanks for the good wishes :D , We can't wait till the big day. Claire the missus has been making confetti cones and decorating them all day, I've been brewing and supping :lol:

I'm toying with the idea but have lots of other tasks to do before I go all grain :wink:

New bathroom before new brewhouse according to SWMBO :lol:

If I do AG I cant decide whether to go gas or electric :?

I'd go gas if you can afford it. For me, electric is a PITA.

Have you got two elements in your boiler max, i could understand you being cheesed off if you only had one but with two they are pretty quick.

Hi Guys

Just an update on my Coopers Mexican Cerveza progress.

I lifted the fermenter lid this morning and to my amazement the wort is still bubbling/fizzing rather rapidly still after almost 5 days andthe froth/Krausen is still half inch thick!. :D
Another thing I noticed is that there's almost no trub brought to the surface of the fermenter so does this mean the LME is very good with no nasties in?

Also the smell was divine whilst removing the lid with no sulphurus or eggy smells yet.It' a nice clean lager smell. :D

I will check the SG Sunday I think for the first time.
My temperature has been stable all week at 14C, I'm very pleased so far :D

I don't think you could go wrong with saaz hops.

Hi all

A further update on the progress of this brew.

I lifted the lid on the fermenter this afternoon and tested with a hydrometer. It was at 1.010 :D

There's still quite a bit of activity with many bubbles still rising so I'm sure it will get to 1.008 as specified or even lower!

The Wort is very clear even at this stage and has a colour just like a corona!

I had to have a taste :wink: and I was amazed, It has a little sweetness but very dry at the same time with no nasty taste and even the missus loved it. :o

The lid is back on and I'll leave it now for a few more days and then re-check the SG.

Need to buy another pressure barrel now cos my corny and Kingkegs are full with my last 2 brews!

Roll on the summer. I best get the limes in :lol:
