IN THE SHED 31ST MAY 2012 ( FOOTBALL-SMIFF )

I have a freezer Full of hops and a sack of Pilsen malt and a few KG of Golden promise and all the extra grains I should need, yeast a plenty and bit of time on my hands and can not decide what to do, so as usual I made it up as I went along :shock: .


Grains:
4 Kg Pilsen Malt
4 kg Flaked Wheat
2 Kg Micronised Maize

Added to final 15min Boil:

50g Coriander Seed super fine in coffee grinder
10g Grains of paradise super fine in coffee grinder
4 Limes Zest and juice and whole
2 Lemons Zest and Juice and whole

Hops:
10g Citra 15% @ 90min
30g Citra 15% @ FO

RIMS:
40º
50º
64º

Mash out at 77º

Yeast:
Safbrew WB-06 in one and a Coopers wheat beer yeast cake from a previously brewed wheat beer kit :) (which is not too bad for a kit , I did add 800g of vimto cherry syrup to the kit, which was nice)


2 x 22ltrs @ 1048 in the FV's :D

Citra and fruit juice... I see the similarities :) I don't think I'm a fan of WB-06 it didn't keep well, fairly fine when fresh though.

Yea I'm after a Quick Drinker and did not have T-58 but the Grains of paradise should spice it a bit. Not sure it as White as your "Nit",expect its the Maize but needed that to add some sweetness as the 64º mash will make it dry.

Nice Grain / wheat flavor to it, cant get the spice but i do get a Camille floral waft but not sure why that is.

Think is my next brew even though I have another keg of it, and this time I'm going heavy with the Spice.

A Wit is supposed to be subtle, maybe sort of a soft creamy amalgam of spices and malt / wheat.

its has a sweet grapefruit flavour oh yea.
