Seymour Caledonian Deuchars IPA Clone Recipe
6 US Gallons = 5 Imperial Gallons = 22.7 Liters
MALTBILL:
57% = 5.47 lbs = 2.48 kg, Golden Promise malt
38% = 3.64 lbs = 1.65 kg, Wheat malt
5% = .46 lb = .21 kg, Crystal malt
HOPS:
.7 oz = 20 g, Fuggles, 60 minutes
.7 oz = 20 g, Styrian Goldings, 60 minutes
.52 oz = 15.2 g, Willamette, 15 minutes
.52 oz = 15.2 g, Fuggles, 5 minutes
.52 oz = 15.2 g, Styrian Goldings, 5 minutes
MASH at 67° C, 60 minutes or until converted
BOIL 60 minutes
YEAST:
English ale yeast of your choice, but Fullers strain (available from bottle culture, White Labs WLP002, or Wyeast 1968) or Whitbread B strain (available as S-04, WLP007, or Wyeast 1098)
Pinch of calcium carbonate in mash, pinch of gypsum near end of boil to make the hops pop. Irish moss near end of boil for clarity.
Prime bottles/cask with 1/3 cup cane sugar, boiled with some water.
STATS assume 75% mash efficiency and 75% yeast attenuation:
OG: 1.046
FG: 1.012
ABV: 4.4%
IBU: 30
COLOUR: 7 SRM/14 EBC
