Deuchars IPA

Out ealry this morn, 300 miles+ done, in hotel room now (ooer missus), sampling a deuchars ipa, havent tasted one of these for a while and I think its probably about my fave sort of taste in a beer. bottle says made with styrian, fuggles and williamette, all of which I've got, anyone got a recipe for this? :) :)

yes of course, i dont have it with me but from memory, it doesnt include williamette or any wheat malt, as stated on bottle label. I've emailed caledonian, theyve replied that they will look into it so I'll post back if they come up with the goods

Believe it or not I have had four goes at this using 3 different recipe's the closest I have got is using GWs from the book with just fuggles and bobek. I think the choice of yeast is key and found that WLP 007 made the best followed closely by WLP 001 I intend to try it with a true Scottish yeast next.

Seymour Caledonian Deuchars IPA Clone Recipe
6 US Gallons = 5 Imperial Gallons = 22.7 Liters

MALTBILL:
57% = 5.47 lbs = 2.48 kg, Golden Promise malt
38% = 3.64 lbs = 1.65 kg, Wheat malt
5% = .46 lb = .21 kg, Crystal malt

HOPS:
.7 oz = 20 g, Fuggles, 60 minutes
.7 oz = 20 g, Styrian Goldings, 60 minutes
.52 oz = 15.2 g, Willamette, 15 minutes
.52 oz = 15.2 g, Fuggles, 5 minutes
.52 oz = 15.2 g, Styrian Goldings, 5 minutes

MASH at 67° C, 60 minutes or until converted
BOIL 60 minutes

YEAST:
English ale yeast of your choice, but Fullers strain (available from bottle culture, White Labs WLP002, or Wyeast 1968) or Whitbread B strain (available as S-04, WLP007, or Wyeast 1098)

Pinch of calcium carbonate in mash, pinch of gypsum near end of boil to make the hops pop. Irish moss near end of boil for clarity.

Prime bottles/cask with 1/3 cup cane sugar, boiled with some water.

STATS assume 75% mash efficiency and 75% yeast attenuation:
OG: 1.046
FG: 1.012
ABV: 4.4%
IBU: 30
COLOUR: 7 SRM/14 EBC

Willamette is basically Fuggle grown in US, I've been told many times they're interchangeable. At least so say Americans.

Hi, Preparing to do this monday, good job fuggles and williamette are the same, just discovered I aint got any fuggles! Will sort out with just williamette and styrians to the same IBU, post results later.

3100 golden promise
1000 wheat malt
200 crystal
50 oats

williamette 20g 60 mins (added to boil)
styrians 20 g 60 mins "
williamette 15g 15 mins
williamette 15g 5 mins
styrians 15g 5 mins


expected og 1044

ibu 36

that should do it, waters treated ready, up early in morning, should be doughing in by 7.30, going to do an enhanced coopers stout while mash/boil is on, if anyone got any ideas for upgrading it for xmas, I'm listening :D :D

kegged today, fg at 1011, tastes pretty good, hopeful this is a good un, good job I posted recipe on here, I accidentally deleted it!

Coopers stout in keg now as well, didnt doctor it, just added DME and some demerara. :)

Got a tricky customer to brew for likes deuchars out the bottle but not the keg could anyone fill me in as why that might be?

He's right, they're different brews:

My recipe should get you very close to either version, but use your favorite calculator to adjust the desired ABV and IBU.
